Stir-fried tofu and vegetables is one of my favorite dishes.
Though it needs a pre-preparation of the marinated tofu, it is quite a simple and quick recipe.

The ingredients in this recipe are meant for about 4 servings.

The Tofu Marinade

Ingredients

  • 250 gr Tofu cut into small cubes
  • Half a teaspoon of black pepper
  • Teaspoon of salt
  • 1/4 cup of soy
  • 4 tablespoons of red wine
  • Tablespoon olive oil
  • Tablespoon of sesame oil
  • Teaspoon ginger

Preparation

  • Mix all the ingredients, besides the tofu, in a bowl.
  • Soak the tofu cubes in the marinade for a minimum of  4-6 hours to absorb all the flavors.

The Stir-Fried Tofu and Vegetables

Ingredients

  • 2 carrots cut into strips
  • 1 large red bell pepper, cut into strips
  • ¼ Chilly pepper cut to slices- for the spicy lovers
  • 1 onion cut to small cubes
  • 4 cloves of garlic cut to small pieces
  • 100 grams of mushrooms cut to small slices
  • 1/4 cup soy sauce
  • 4 tablespoons of red wine
  • Tablespoon of sesame oil
  • Teaspoon of salt
  • Tablespoon olive oil

Preparation

* If you wish to mix the vegetables with rice or pasta, this is the stage to boil water for its cooking.

  • Heat a wok or deep pan with a tablespoon of olive oil.
  • Add the onion and stir until it’s browned and then add garlic and fry for 1 more minute.
  • Add the bell pepper strips and the carrots and fry for 5-7 minutes.  
  • Then add the black pepper, the wine, soy sauce, sesame oil, and spices. 
  • Fry for 5 minutes and then add the mushrooms.
  • Stir for 2 more minutes and taste to see if it needs more salt, according to your taste. 
  • At the same time in another pan, we will fry the tofu in its marinade,
  • After the tofu is seared and browned, we will add it to the stirred vegetables.

A Few Notes

  • After the dish is ready, you can cut and add fresh green onions on top.
  • You can add broccoli, green beans, cauliflower if you like more vegetables.
  • If you are on a gluten-free diet make sure the soy sauce is gluten-free.

There are also lots of kinds of pasta made from beans, rice, or buckwheat
